Recipe for Peruvian Flan.
6 eggs
1 can of evaporated milk
1 can of sweetened condensed milk
1 tblsp of vanilla
1 cup of sugar
Preheat oven to 350 degrees
in a extra clean sauce pan place sugar over med heat. Heat sugar to a caramelized state and remove from heat and pour carefully into a 8 inch pie pan(extra deep)
In a bowl combine eggs, vanilla, evaporated milk, sweetened condensed milk and blend well.
Pour mixture over caramel and place in a bain marie (water bath). Make sure the water comes at least lf way up the side of the pan.
Cook for 50 minutes or until flan sets. Use a knife to test for doneness
Remove from oven and let cool. Cut around the outside of pan and flip onto a serving plate.
